Chipotle Dressing

Ingredients

  • 1 cup unsweetened coconut milk or almond milk
  • 1 tbsp chia seeds (or ground flax seeds)
  • 3 sun-dried tomatoes (not packed in oil), or 2 tsp tomato paste
  • 1 sm clove garlic
  • 1 date, pitted (or sweetener of choice)
  • 1 tsp miso paste
  • 2 tbsp fresh lemon juice
  • 1 tbsp apple cider vinegar
  • 1/4 to 1/2 tsp chipotle powder
  • 1/4 tsp ground cumin
  • water, as needed

Method

  • Pour the non-dairy milk into a high-speed blender and add all of the remaining ingredients into the blender.
  • Let the ingredients sit in the blender for about 15 minutes to allow the chia seeds and sun-dried to soften and rehydrate.
  • Then blend the ingredients.
  • After 15 minutes, check the dressing for thickness. If the mixture is too thick, add a bit more non-dairy milk or water.
  • Thickness is dependent on personal preference.
  • This dressing will keep for a few days in the refrigerator.
