This curry quinoa bowl recipe will cure your cravings for the East. The light spicy taste will give you a homey feeling, lighting you up with energy for the rest of the day. This is an all-day, anytime food that you can easily make and enjoy!
(Zucchini, cabbage, kale, spinach, Sesame seeds for garnish and green onions are great)
Stir quinoa, granulated onion, and curry powder with 1 1/2 cup water in a medium saucepan. Bring to a boil, then cover pan and reduce to a low simmer for 15 minutes
While quinoa is cooking, saute veggies over medium-low heat and cover. Stir occasionally, adding a little water needed.
While vegetables warm, mince garlic and ginger. After vegetables have softened after about 5 minutes, increase heat to medium-high and stir in garlic, ginger, and curry powder, cooking for 2 more minutes. Remove the pan from heat and stir in tahini.
Stir the quinoa in with the vegetables. Serve topped with avocado and sesame seeds if desired
