2 cups any flour combination (whole wheat or spelt, whole oats or oat flour & corn works well)
2 tsp. baking powder
½ tsp. baking soda
¼ tsp. salt
2 eggs (or substitute)
2 cups your choice: plain or vanilla soy yogurt, fruit juice, milk (soy, almond, rice, goat or any milk soured with 2 tsp. lemon juice -- mixture will curdle)
1-2 Tbsp. coconut oil (3-4 Tbsp. for waffles)
Mix dry ingredients in a medium bowl. If using milk, mix with lemon juice & allow to sit for 5 minutes; mix with remaining liquids. Combine both mixtures, stirring. Mixture will be a bit lumpy. Cook on preheated griddle or waffle iron. Serve with sautéed apples cinnamon, or unsweetened applesauce, or all- fruit syrup or pure maple syrup (in very small amounts). You can top it with fresh berries or bananas.
